"The Henschke name is perhaps better known for the Hill of Grace, but for me its premier red is the Cyril Henschke Cabernet Sauvignon, which since the 1981 vintage has stood head and shoulders above most other Australian cabernet-based wines. From the Eden Valley comes this wine of great depth and style which develops along the classic cedar and cigarbox lines of top Medoc reds in ripe years."  Jeremy Oliver

The Henschke Cyril Henschke Cabernet Sauvignon is named after Cyril Henschke, who created Hill of Grace and Mount Edelstone. The vines were planted in the late 1960s by Cyril at Henschke's Eden Valley Vineyard, located at an altitude of 500m in the cooler part of the Mount Lofty Ranges. The wine celebrates the incredible beauty that emerges from the vibrant rows of the Eden Valley vineyard and is revered for its texture, depth, complexity and fine-grained tannins. The first vintage of Cyril Henschke was produced by Cyril and his son Stephen in 1978. National acclaim followed shortly after when the 1983 Cyril Henschke won the Tucker Seabrook Trophy judged as the best Cabernet in all national wine shows.

"78% cabernet sauvignon, 15% cabernet franc, 7% merlot. This is one of Australia's greatest cabernets, staring down Coonawarra and Margaret River (just for starters). The argument evaporates when you admit - as you must - that those wines are in such different styles it's an apples and oranges comparison. The real comparison is between this and Mount Mary. It has a purity and elegance that puts it in a class of its own."  James Halliday

Concentrated and complex aromas of cassis, black and red currants, blackberry leaf and violets with underlying savoury nuances of crushed dried herbs, cigar box, beef stock and anise spice, all supported by dark cedary French oak. A flood of rich blackberry and bright red currants greet the palate, which is precisely defined by purity of acidity, an elegant structure and layers of long, silky fine-grained tannins that provide great persistence. South Australia has a vast diversity in geography and climate which allows the State to be able to produce a range of grape varieties - from cool climate Riesling in the Clare and Eden Vallies to the big, full bodied Shiraz wines of the Barossa Valley and McLaren Vale.
