Bin 707 is Penfolds cabernet sauvignon Grange equivalent. The style relies on the riper spectrum of cabernet sauvignon flavours and tannins, is matured in new American oak and expresses the Penfolds policy of multi-vineyard, multi-region fruit sourcing. Named by an ex-Qantas marketing man, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011 or 2017 (when fruit of the required style and quality was not available). Full bodied and with good cellaring potential, Bin 707 has a secure place among the ranks of Australia's finest cabernets.

"An incredibly pure, precise and focussed wine, charged with bright, crisp, crunchy fresh berry fruit and fifty shades of Cabernet cassis. Tensile tannins, with grain but exquisite finesse. This is vivid, vibrant, energetic and dynamic in its clarity and luminosity. A tidal wave of fresh berries. The fruit is tightly coiled and strapped to the well-defined, chiselled backbone. It glides over the palate, glistening as it does so and releasing little eddies and undercurrents of fresh fruit and juicy sapidity. The 2021 Penfolds Bin 707 is 100% cabernet sauvignon sourced from premium vineyards in Coonawarra, Barossa Valley and Wrattonbully. The wine was matured for 16 months in new American oak hogsheads.

"An impenetrable/dense blackness, reluctantly reddening on the rim. Essence of Bin 707, yet neither over-concentrated nor laboured. On the nose: Textbook/classic. Fresh/lively – leaps out of the glass.  All mandatories noted - blackcurrant/cassis/mulberry/cooked black plum … avec freshly picked black Negronne fig, plus a 'blackness' hovering atop.  Spices? But of course – nutmeg and a Moroccan-derived assortment. In this context was a deconstructed dukkah mentioned - cumin, coriander, sesame?  Oak? Possibly camouflaged via scents of ground coconut rough and brandy snap, toasted sourdough, with a little dark chocolate for good measure.  A swirl, some air, and a little time in glass quickly reminds that this is ever so much more than just a red wine made from cabernet! On the palate: Engulfing/lush. Powerful - propelled by a wave of fruits - fresh mulberry, fig, Goji berry, raspberry, fresh blackcurrant. And licorice.  Pondering derivation - cocoa powder, pastry (cinnamon scroll/bun), crusted/roasted beef? No matter, detected.  Ripe and firm, glossy tannins frame many layers, including those that appear to stand above (levitating to another realm!).  A textural creaminess, sumptuousness - possibly by way of oak? Noted that oak was not mentioned during tasting – implying  seamless integration. Really? But it’s 100% new!  Balanced, complete, latent. Peak drinking: 2026-2050. Penfolds

South Australian is responsible for more than half the production of all Australian wine. It is home to more than 900 wineries across 18 wine regions. The regions are Adelaide Hills, Adelaide Plains, Barossa Valley, Clare Valley, Coonawarra, Currency Creek, Eden Valley, Kangaroo Island, Langhorne Creek, McLaren Vale, Mount Benson, Mount Gambier, Padthaway, Riverland, Robe, Southern Fleurieu, Southern Flinders Ranges and Wrattonbully.

Many of the well-known names in the South Australian wine industry established their first vineyards in the late 1830s and early 1840s. The first vines in McLaren Vale were planted at Reynella in 1839 and Penfold's established Magill Estate on the outskirts of Adelaide in 1844.

South Australia has a vast diversity in geography and climate which allows the State to be able to produce a range of grape varieties - from cool climate Riesling in the Clare and Eden Vallies to the big, full bodied Shiraz wines of the Barossa Valley and McLaren Vale.
