Santa & D'Sas is a collaboration between two winemaking families - Santarossa & Di Sciascio. With a shared Italian cultural heritage and with strong links to the King Valley, it's no surprise they produce a range of delicious Italian varietals that offer sensational value for money. Fiano, arguably the greatest white wine of Italy, is an ancient grape variety with its heartland in Campania, Southern Italy. It is recognized for its unique nutty flavor profile, textural mouthfeel, high acidity and ability to age.
"The 2021 Fiano is a textured wine with honeysuckle and fleshy stone fruit characters soaring throughout. It is vibrantly fresh, with a supple mid-palate, and zesty citrussy acidity on the long palate. All class. The price makes it a steal." Nick Munday
Fruit for The 2021 King & I Fiano was hand picked and whole-bunch pressed. Just over half (55% ) was pressed directly to a combination of old French puncheons (300L & 500L) and oak foudre (2800L) for fermentation and maturation for 9 months on lees. The balance was pressed directly to stainless steel (40%) and concrete (5%). Wild yeasts were used to initiate fermentation and cultured yeasts added when a specific, lower alcohol level was reached.

Victoria
Victoria is home to more than 800 wineries across 21 wine regions. The regions are Alpine Valley, Beechworth, Bendigo, Geelong, Gippsland, Glenrowan, Goulburn Valley, Grampians, Heathcote, Henty, King Valley, Macedon Ranges, Mornington Peninsula, Murray Darling, Pyrenees, Rutherglen, Strathbogie Ranges, Sunbury, Swan Hill, Upper Goulburn and Yarra Valley.
Victoria's first vines were planted at Yering in the Yarra Valley in 1838. By 1868 over 3,000 acres had been planted in Victoria, establishing Victoria as the premier wine State of the day. Today, the original vineyards planted at Best's Wines are among the oldest and rarest pre-phylloxera plantings in the world.
Victoria's climate varies from hot and dry in the north to cool in the south and each wine region specialises in different varietals. For example, Rutherglen in the north is famous for its opulent Muscats and Topaque and bold reds, while the many cooler climate regions near Melbourne produce world class Chardonnay and pinot Noir. Victoria is truly a wine lover's playground.
